What Is NFPA 96?
NFPA 96 is the National Fire Protection Association's Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations. It's the rulebook that fire marshals reference during inspections, that insurance carriers reference during underwriting, and that local building codes adopt by reference in most U.S. jurisdictions — including all five states we service.
Not optional. Not advisory. It's the standard your kitchen is held to every day, whether you've read it or not.
NFPA 96 covers everything from hood construction to fire suppression systems to ventilation duct design. The sections that matter most for grease filters are 6.1, 6.2, and Chapter 14 (for solid fuel cooking). Here's what each one actually requires.
Key NFPA 96 Requirements for Commercial Kitchen Grease Filters
Section 6.1.1 — Approved Filters Required
Every Type I commercial kitchen hood must have approved, listed grease filters or other approved grease removal devices in place. Translation: if you cook with grease-producing equipment under a Type I hood, you must have a UL-listed grease filter installed. Aluminum mesh, cardboard frames, and any non-listed substitute all fail this requirement.
What NFPA 96 Section 6.1.1 Requires
Type I hoods must use approved, listed grease filters made of stainless steel or another listed material that suits the application. The filters have to be installed in the hood and arranged so all exhaust air passes through them.
Sections 6.2.1–6.2.3.5 — Filter Construction & Cleaning
These sections cover how filters must be built and how they must be maintained. Three requirements drive everything:
- Filters must be of substantial construction — commercial-grade, not residential
- They must be arranged so grease drains into a sealed grease cup or container
- They must be accessible for cleaning, and cleaned at frequent intervals
"Frequent intervals" is where most kitchens get tripped up. NFPA's interpretation depends on cooking volume. High-volume operations and wok stations typically need biweekly cleaning to stay compliant. Sit-down restaurants and lower-volume operations are usually fine on a monthly cadence. Solid fuel cooking operations can require even more frequent cleaning under Chapter 14.
What NFPA 96 Sections 6.2.1–6.2.3.5 Require
Grease filters need to be commercial-grade, arranged so grease drains into an approved collection container, and accessible for cleaning. Cleaning has to happen at intervals appropriate for the kitchen's cooking volume.
Chapter 14 — Solid Fuel Cooking Operations
If your kitchen runs a wood-fired oven, charcoal grill, or any solid fuel cooking equipment, additional requirements apply on top of the base NFPA 96 standard. Spark arrestors are required to prevent embers from reaching the exhaust ductwork. Cleaning frequency increases. In many cases, the solid fuel exhaust must be on a separate system from your grease-producing cooking equipment.

The EPA Clean Water Act: The Part Most Kitchens Miss
